Smokey Homemade Baked Beans
It is hard to go past the humble baked bean for a quick, inexpensive and nutritious meal. This recipe gives the classic comfort food a smokey twist, and the hearty result is sure to be become a new brunch favourite. High in protein, flavour and fibre, low GI and fat - and completely cruelty free.
Ingredients
- 2 tablespoons olive oil
- 1 large brown onion, finely chopped
- 3 cloves garlic, crushed
- 2 teaspoons smoked paprika
- 1-2 teaspoons dried chilli flakes
- 1 teaspoon brown sugar
- 2 teaspoons dark soy sauce
- 1 x 400g tin of cannellini beans, drained and rinsed
- 1 x 400g tin of crushed tomatoes
Method
- Place a non-stick plan on medium-high heat
- Add olive oil
- Add finely chopped onion and a generous pinch of salt, cook until tender and translucent
- Add garlic and stir for a further minute
- Add smoked paprika and chilli and stir for several minutes, ensuring onion is coated
- Add remaining ingredients
- Reduce the sauce on medium-high heat, stirring frequently until thick
- Add pepper to taste and garnish with fresh herbs of your choosing
