Smokey Homemade Baked Beans

It is hard to go past the humble baked bean for a quick, inexpensive and nutritious meal.  This recipe gives the classic comfort food a smokey twist, and the hearty result is sure to be become a new brunch favourite. High in protein, flavour and fibre, low GI and fat - and completely cruelty free.   

Ingredients

  • 2 tablespoons olive oil
  • 1 large brown onion, finely chopped  
  • 3 cloves garlic, crushed
  • 2 teaspoons smoked paprika
  • 1-2 teaspoons dried chilli flakes    
  • 1 teaspoon brown sugar
  • 2 teaspoons dark soy sauce
  • 1 x 400g tin of cannellini beans, drained and rinsed
  • 1 x 400g tin of crushed tomatoes

Method

  • Place a non-stick plan on medium-high heat
  • Add olive oil
  • Add finely chopped onion and a generous pinch of salt, cook until tender and translucent
  • Add garlic and stir for a further minute
  • Add smoked paprika and chilli and stir for several minutes, ensuring onion is coated
  • Add remaining ingredients
  • Reduce the sauce on medium-high heat, stirring frequently until thick 
  • Add pepper to taste and garnish with fresh herbs of your choosing
