Super Simple Sunday Pancakes

This pancake recipe is as simple as they come and can be used to make either fluffy hotcake-style pancakes or crepes by switching the type of flour.

Ingredients

(makes approx. seven)

  • 1.5 cups of flour (self-raising flour for fluffy pancakes or plain flour for crepes)

  • 1.5 cups of milk

  • 2 eggs

  • 1 teaspoon castor sugar*

  • a couple of drops of vanilla essence*

  • pinch of salt

  • I tablespoon of melted butter

*unless making savoury crepes

Method

  • Combine flour, milk, eggs, salt, sugar and vanilla in a large mixing bowl. Hand whisk until there are no lumps.

  • Melt butter in a frypan (non-stick or cast iron).

  • Mix the melted butter into the pancake batter

  • Using the same frypan, cook the pancakes on medium-high heat. Use one ladle of batter per pancake - even out the mixture and shape it into a round using the back of the ladle

  • Wait for bubbles to appear and pop on the surface of the pancake before flipping

  • Enjoy with your favourite topping, the options are endless!
